Nebraska Grown Tomato Soup

Who knew that home made tomato soup could be so easy and delicious?
Ingredients:
- 4 Tbs. butter
- 1 small onion (chopped)
- 1 quart canned tomatoes
- 1 1/2 cup water or broth
- 1/2 tsp. salt
Directions:
- Melt 4 T butter in a Dutch oven or large saucepan.
- Roughly chop 1 small onion and saute just until soft.
- Add 1 quart jar of canned tomatoes, 1 ½ cups water or broth, and ½ tsp salt.
- Simmer 45 minutes, stirring occasionally and seasoning as desired.
- Use an immersion blender or blend in small batches. Serve.
