Green Pea & Edamame Dip
Green Pea Dip

Celebrate the season with a vibrant, locally-sourced twist on a classic favorite.

Ingredients:

  • 1 cup frozen or fresh green peas
  • 1 cup frozen shelled edamame
  • 3 tbsp water
  • 3 tbsp tahini
  • 1 tbsp olive oil
  • 1/2 lemon juiced
  • 10 fresh mint leaves
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • Pita chips or fresh vegetables for dipping

Directions:

  1. Cook the peas and edamame in a saucepan of boiling water for 3 minutes, then drain.
  2. Place all the ingredients in a food processor and blend until creamy.
  3. Taste test and adjust to your liking. Add more tahini for a creamier consistency. Add more lemon for zest.
  4. Store in an airtight container in the fridge for up to 5 days.
