Tomato Soup in Bowl

Who knew that home made tomato soup could be so easy and delicious?      

Ingredients:

  • 4 Tbs. butter
  • 1 small onion (chopped)
  • 1 quart canned tomatoes
  • 1 1/2 cup water or broth
  • 1/2 tsp. salt

Directions:

  1. Melt 4 T butter in a Dutch oven or large saucepan.
  2. Roughly chop 1 small onion and saute just until soft.
  3. Add 1 quart jar of canned tomatoes, 1 ½ cups water or broth, and ½ tsp salt.
  4. Simmer 45 minutes, stirring occasionally and seasoning as desired.
  5. Use an immersion blender or blend in small batches. Serve.
