Instant Pot Tomato Basil Soup

Ingredients:

  • 8 cups washed, cored, cut and crushed tomatoes
  • 1 1/4 cup diced celery
  • 2 cups diced onion
  • 1 clove garlic, minced
  • 1/3 cup fresh basil chopped
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2-3 tablespoons brown sugar

Directions:

  1. Combine all ingredients except for the brown sugar into the Instant Pot liner. Place liner into the Instant Pot, lock lid and program for 12 minutes on manual/high pressure. Allow pressure to naturally release for 10 minutes then perform a quick release.
  2. Process mixture through a food mill or sieve to strain solids from soup. Thicken soup by using the sauté function on the Instant Pot, simmering on the stovetop or by adding a slurry of cornstarch or potato starch. Add 2 to 3 tablespoons of brown sugar to

Soup can be frozen in freezer-Safe containers.
