Bison Stew
Cooking Time: 1 hour
Ingredients:
- 1lb bison stew meat
- or sirloin tip steak
- or roast cut into 1 inch cubes
- 1/4 c. coconut oil
- butter or bison tallow
- 3-4 cups cubed vegetables (potatoes
- onions
- carrots
- sweet potato
- cabbage
- tomatoes
- peppers
- zucchini
- etc.)
- 2-4 cups bison bone broth
- Fresh herbs as desired
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. flour
- 1/4 c. cold water
Directions:
Preheat oil or butter in heavy 6 quart kettle. Brown bison cubes on all sides, about 10 minutes. Add vegetables and cook until tender crisp. Add broth and seasonings. Bring to a boil, then reduce heat and simmer for 45 minutes or until meat and vegeta
